I always wanted to make those beautiful vegan galaxy donuts, but since I try to avoid refined sugar, I never thought about figuring out a way to make them without powdered sugar. The only alternative I could think of was the cashew icing I use on my raw cakes, but that required the donuts to be chilled so the icing could set. Oh well, you can’t have it all!

I also wanted to use natural food colouring, so I played with the Rawnice powders I had (use code “joeysplate15” for 15% off your order). Success! I might try to add a bit of pectin next time so the icing stays perfect longer. Overall I think they turned out great, even my super carnivorous roommate loved them. That means my vegan galaxy donuts must be pretty tasty hehe


Vegan apple galaxy donuts

Gluten-free and refined sugar-free vegan apple galaxy donuts


For the donuts:

  • 5 tbsp oat milk
  • 2 tbsp melted coconut oil (neutral taste)
  • 3 tbsp maple syrup
  • 1/2 tsp vanilla
  • 5 tbsp apple sauce
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4c protein powder
  • 1/2c almond flour
  • 1/2c gluten free blend
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 3 tbsp coconut sugar
  • 1.5 tbsp water (for the chia powder)
  • 1/2 tbsp chia powder
  • 1/8 tsp sea salt

For the icing:

  • 10 tbsp water
  • 1c soaked raw cashews
  • 1/4c maple syrup
  • 2 tsp bourbon vanilla extract
  • 1/3c melted coconut oil (neutral taste)
  • Natural vegan food colouring powders: pitaya, charcoal, blue spirulina & butterfly pea flower powder (rawnice)


For the donuts:

  1. Pre heat the oven to 375c
  2. Combine the chia powder and water and mix well, set aside
  3. Whisk all wet ingredients together in a bowl *
  4. Combine all dry ingredients together in a separate bowl & mix well
  5. Mix wet and dry ingredients together until the mixture is smooth
  6. Fill silicon donut molds with the mixture
  7. Bake for 25-30min
  8. Allow to cool, then place in the freezer for 15-20 min**

For the icing:

  1. Combine all ingredients except coconut oil in a high speed blender & blend until smooth
  2. Add coconut oil & blend until smooth
  3. Split into 5 portions & add the colouring powders (white, black, light blue, dark blue & fucshia)
  4. Once the powders are well incorporated, pour in one bowl
  5. Dip the chilled donuts in the bowl and set in the fridge***


*Make sure wet ingredients are room temperature, otherwise the melted coconut oil will harden

**If the donuts aren’t chilled enough, the icing will not set

***I add more colouring after each dip, otherwise the colour will all start blending together
