raw vegan no bake plantbased dessert recipe

I’ve been working on this raw vegan carrot cake recipe for a while, I could never get the base to be hard enough for my taste until I added psyllium and oat flour. This is a super healthy & guilt-free vegan carrot cake, enjoy 🙂

Carrot cake

  • 2c chopped carrots
  • 1/2c fresh coconut water (or water)
  • 1/4c agave
  • 3/4c oat flour (powder raw oat grains in grinder)
  • 1 1/2c almond flour
  • 1/2c flax seed powder
  • 2.5tsp cinnamon
  • 1/2tsp cloves
  • 1/2tsp nutmeg
  • 1tbsp psyllium
  • 2tbsp coconut flakes
  • 1/4c raisins
  • 1/4c walnuts


  1. Combine carrots, coconut water and agave in a blender and purée.
  2. Mix oat flour, almond flour, flax, spices, psyllium & coconut flakes in a big bowl
  3. Combine wet and dry ingredients together until it turns into a paste, then add raisins & walnuts
  4. Press with fingers in silicon molds
  5. Set in fridge while making the icing

Cashew icing

  • 1c soaked raw cashews
  • 6tbsp fresh coconut water (or water)
  • 5tbsp agave
  • 1tsp vanilla
  • 6tbsp melted coconut oil
  • juice of 1/2 lemon


  1. Combine cashews, coconut water, agave, vanilla & lemon juice in blender and blend until smooth
  2. Incorporate melted coconut oil and blend until smooth
  3. Pour into molds
  4. Set in freezer for about half an hour (until it hardens)

Chocolate sauce

  • 1/4c raw cacao powder
  • 1/4c agave
  • 1tsp vanilla
  • 2tbsp melted cacao butter
  • 1tbsp melted coconut oil


  1. Mix raw cacao powder, agave & vanilla together in a cup
  2. Incorporate melted cacao butter & coconut oil and mix until smooth
  3. Pour over cakes
  4. Set in freezer until it hardens
