Raw vegan lemon-meringue squares

Description

My mother used to make the best lemon squares in the world when I was a kid (or at least that’s how I remember them, I might have a different opinion now that I’m vegan haha), so I’ve been dying to recreate her delicious recipe for ages. After a lot of trial and error, I managed to find the perfect ratios for the lemon custard and meringue layer so here it is! My raw vegan lemon squares, I hope you guys enjoy it.


Ingredients

Crust

  • 1/2c raw almonds
  • 1/2 cup cacao nibs
  • 1/2c coconut flakes
  • 3tbsp agave or maple syrup
  • 2 tsp vanilla
  • 1tbsp almond butter
  • 3tbsp raw cacao powder

Meringue layer

  • 1/4c raw cashews, soaked 2h (dry measure)
  • 1/4c water
  • 2tbsp maple syrup or agave
  • 2 tsp vanilla extract
  • 2/3c liquefied coconut oil

Lemon layer

  • 1/2c chopped mango
  • 1/4c water
  • 2tbsp maple syrup or agave
  • 1/4c cashews, soaked 2h
  • 1 tsp lemon flavour
  • 1tbsp lemon juice
  • 1tsp tumeric powder
  • 1/2c liquefied coconut oil (neutral taste is best)

Pitaya-white chocolate sauce (option 1)

  • 3/4c fresh raspberries
  • 1tsp pitaya powder (I use the one from www.justblends.com)
  • 1tbsp liquefied coconut oil (neutral taste if poss)
  • 1tbsp liquefied cacao butter
  • 2tsp agave or maple syrup

Chocolate sauce (option 2)

  • 1/4c raw cacao powder
  • 1/4c agave or maple syrup
  • 1tsp vanilla extract
  • 1tbsp liquefied coconut oil
  • 2tbsp liquefied cacao butter

 


Instructions

Crust

  1. Grind the nuts, cacao nibs & coconut flakes in a food processor
  2. Mix remaining ingredients and pulse until it binds together
  3. Press into silicon molds with fingers & set in freezer

Meringue layer

  1. Blend everything except coconut oil until smooth
  2. Add coconut oil and pour over crust
  3. Set in freezer for 30min

Lemon layer

  1. Blend everything except coconut oil until smooth
  2. Add coconut oil and pour over crust
  3. Set in freezer for 30min

Pitaya-white chocolate sauce (option 1)

  1. Mix all ingredients in a blender until smooth. Make sure everything is at least room temperature (I.E not cold straight from the fridge)
  2. Pour over each square & set in fridge

Chocolate sauce (option 2)

  1. Mix all ingredients in a blender until smooth. Make sure everything is at least room temperature (I.E not cold straight from the fridge)
  2. Pour over each square & set in fridge
