I’ve been developing this delicious raw vegan sprouted buckwheat pizza recipe for months, I’m finally 100% happy with how it turned out. I tried to make it as low fat as possible, but let’s get real… It’s a freakin pizza lol. You’ll need a dehydrator, a food processor and a blender.

Buckwheat crust

  • 2.5c sprouted buckwheat
  • 1 avocado
  • 1/2c flax seed powder
  • 1/2c almond flour
  • 2tsp sea salt
  • 2tsp nutritional yeast
  • juice of 1/2 lemon
  • 1 drop of oregano oil (or 1tbsp of fresh oregano)
  • pinch of pepper
  • 1tbsp chopped fresh basil
  • 1/2c chopped leeks
  • 2tsp agave or maple syrup (you could even use dates)

Instructions

  1. Soak buckwheat groats for 24h (rinse twice)
  2. Mix buckwheat & avocado in a food processor until smooth
  3. Combine with dry ingredients in bowl & mix well
  4. Place the dough on Teflex sheets & spread until you get 1/4in thickness
  5. Dehydrate for 4h, peel teflex sheet and continue dehydrating on mesh sheet for another 13-15h (until desired texture)

Sundried tomato sauce

  • 1c sundried tomatoes (soaked for 2h)
  • Juice of 1/2 lemon
  • 1tbsp agave or maple syrup (you can also use dates)
  • 2 tomatoes (I used italian but other types work as well)
  • 1/2c chopped leeks
  • 1c chopped mushrooms
  • 6 big basil leaves
  • 1 drop of oregano oil (or 1tbsp of fresh oregano)
  • 1c chopped red bell pepper
  • 1tsp apple cider vinegar

Instructions

  1. Purée sundried tomatoes in a food processor (I used my Vitamix but it took forever. Don’t do that lol)
  2. Add remaining ingredients and mix until smooth, but keep some small chunks
  3. Spread on top of pizza crust

Macadamia nut cheese

  • 1c dry macadamia nuts (soaked 2h)
  • 6tbsp water
  • Juice of 1/2 lemon
  • 1/2tsp miso
  • 1tsp apple cider vinegar
  • 2tbsp chopped leeks
  • 5 tbsp nutritional yeast
  • 1tbs
  • pinch of pepper
  • 1tbsp chopped fresh basil
  • 2tbsp chopped leeks
  • 2tsp agave or maple syrup (you could even use dates)
  • ltbsp liquefied coconut oil

Instructions

  1. Purée all ingredients in food processor until smooth
  2. Spread on top of pizza

Creamy herb dressing

  • 1/4c water
  • 1/4c olive oil
  • Juice of 1 lemon
  • 1tbsp agave or maple syrup (or dates)
  • 1tbsp chopped ginger
  • 1tbsp tamari
  • 1/2c fresh coriander
  • 1/4c chopped fresh basil
  • 1/2c soaked cashews

Instructions

  1. Purée all ingredients in blender until smooth
  2. Drizzle on top of pizza & add toppings
